Egg Bake

I go do exercise videos with my friend a lot. It's just down the street and our boys enjoy having 30 minutes or so to play while us Moms get our move on. I find it encouraging. I plan on doing a workout video almost every day. I plan this because about 75% of the time I fail to make it happen. It's nice having someone else to work out with because I know that on the days we make plans it's going to happen. Even if I'm not in the mood, or I've allowed myself to get wrapped up in a project. I force myself out the door so that I don't disappoint her. I'm sure I motivate her in the same way. It's great having someone to blame, because I seem to have issues holding myself accountable otherwise.

Today was one of the days we had plans. After getting back on the bikes this morning I was a little sad to see it sprinkling while I got ready to leave. At the last minute I decided that I wasn't going to let a little rain stop us. We loaded up the bike and road the two blocks to get there. Bean wasn't sure about riding in the rain, but he was all smiles by the time we got there. I got an awesome workout in, and no guilt for using the car!

After lunch I noticed there was about 2 cups of the taco meat leftover from last nights dinner. And we had about 1/3 of the french bread left from the french toast over the weekend. Those two items screamed egg bake to me. I chopped up the bread into .5" cubes. Then I mixed up 6 eggs, 1c milk, the leftover taco meat and what was left in a bag of shredded cheese (about a cup?). I combined that mixture with the bread cubes and let them soak in the fridge for a few hours.

We got back on the bikes to return our Redbox movies this afternoon (They sent out the free March text code yesterday! YAY!). We returned Spookie Buddies (the boys laughed a lot, I couldn't stay interested), Moneyball (Actually rather good. Helps that Brad Pitt is still delicious to look at) and Abduction (Suprisingly good, although we all kept waiting for him to turn werewolf while he was fighting lol). By then it was time for Jason to be headed home so we took off on his most common route and rode the last few blocks home with him. Bean thought that was the best thing EVER.

When we got home I threw the egg bake in the oven at 350. It took about 45 minutes to cook. I heated a can of sweet potatoes on the stove to go with it, and pulled a jar of applesauce out of the fridge when it was done. A dinner everyone loved using up food from other meals. Love it!
