Menu Plan 8/25

Got lost a little. As usually. Menu planning is something I KNOW will help. We eat healthier and cheaper when I do it. But I get frustrated and bored and silly about not doing it. Even though I know I should. Hopefully I can keep it up.

Looks like I skipped 2 weeks. Did we eat anything interesting in that time? Lemme go check my google calendar where I keep track of all that nonsense. Oh yeah. Yummyness.

We grilled the Spicy Peanut Chicken Kabobs. Super yummy and easy. I only remembered in time to marinate for an hour or so. It was still great. Even the boys snarfed it.

Also did a version of Unstuffed Cabbage Rolls. The boys weren't as fond of this, but I liked it. I didn't have the tomato sauce on hand so used lots of stewed tomatoes and a small can of low sodium v8 instead. Gotta use what you have right?

I'm going to switch to blogging AFTER we eat it. Not sure if I've done it before. But it's whats happening.

Monday: I used the Bok Choy from our CSA to make a spin on this. I made it on the stovetop and used chicken breasts instead. Super tasty. All five (my sister was visiting) snarfed it. We have more bok Choy so i think I'll add it to next weeks menu actually.
Tuesday: DH grilled some brats and squash.
Wednesday: I threw a pork roast in the crock. I sprinkled it with a cajun spice mix. It was a crazy day and I'm pretty sure I paired it with a raw veggie tray and some chips.
Thursday: FFYS night. There was a good variety of leftovers to choose from.
Friday: We did a french bread pizza. Super simple and tasty. French bread from the discount basket at the grocer. Leftover sketti sauce. Mozz cheese and Pepperoni from the discount grocer. Ate whatever produce was in the fridge on the side and it was delicious and cheap meal that the boys thought was a splurge.
Saturday: DH made some yummy scrambled eggs and turkey bacon for breakfast. They boys and I had fried egg sandwiches for lunch. Then we grabbed granola bars for a late snack before heading out for with friends and a late night dinner of 1/2 price appetizers at Applebees.
Sunday: French toast for breakfast, Mac n cheese mixed with the leftover pork roast for lunch (and CSA peas), stopped for ice cream after a family bike ride for snack.  I'm feeling more confident with my mandolin lately and used it for Sunday dinner. I sliced up a bunch of the red potatoes we have from the CSA. I spritzed them with olive oil (just put some olive oil in a spritz bottle from the dollar store), and baked them at 375 for 30 minutes. While they were roasting I browned some turkey burger with onion and coated it with BBQ sauce. Then I spread the meat on the potatoes and sprinkled it with cheese before putting it back in the oven for awhile. DH says I should bake them the first time for 45-60 minutes next time. But that it was tasty otherwise. Hard to go wrong with meat/potatoes/cheese/BBQ. Right?

Got some good stuff planned for this week. Hopefully they turn out fabulous. =)
